  • 4 jalapeño peppers, diced
  • 1 can (15 oz) black beans, drained
  • 2 tomatoes, diced
  • 1/2 red onion, diced
  • 1/2 cup corn kernels
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1Dice jalapeños, tomatoes, and onion. Combine all ingredients in a bowl. Mix well. No cooking needed! Let sit for 30 minutes for flavors to meld. This is more of a chunky relish than a smooth sauce. Keeps for 3-4 days refrigerated. Perfect as a topping or dip!
