  • 8 red Fresno or Thai chili peppers
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup rice vinegar
  • 4 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1/2 teaspoon salt

Instructions

  1. 1Blend peppers, garlic, and a little water until smooth. In a saucepan, combine sugar, water, and vinegar. Bring to a boil. Add pepper mixture and fish sauce. Simmer for 10 minutes. Add cornstarch slurry and cook until thickened, about 2 minutes. Cool completely. The sauce thickens more as it cools. Refrigerate for up to 1 month.
